If you had asked me a few years ago if I liked dates, I probably would have said something like, "Ew. Gross. What's the matter with you?" But a little preparation goes a long way, and now dates are on my "yes, please" list. When I attended a food styling class last summer hosted by Lara Ferroni, she prepared dates like this for us to photograph and eat. I was immediately drawn in by the sweet, buttery smell in the air.
Place a pan over medium heat. Saute six dates in 1/2 teaspoon of olive oil. Stir for about three minutes until they're glossy, fragrant and warm. Place on a plate and pat dry with paper towel. Sprinkle with coarse salt.
Magically, they don't taste like crinkly, old fruit, but like warm, caramelly candy. These are perfect for a rainy day snack, which happened to be the case yesterday. And I wouldn't mind if it rained again today.
